How to Fix a Hard to Resist Cheese Cake

Sernik, which is a Polish cheese cake, is one of the most famous dessert delicacies of Poland. You can prepare the crust either with cookie crumbs or make it separately with a mixture of flour, butter and sugar. To make a cookie crumb based cheese cake you will need 1 pound of graham crackers or shortbread cookies and a couple of tablespoons of melted butter. If you are using graham crackers add 1/4th cup of powdered sugar to it while crushing it. For the cheese cake filling you need 8 ounces of softened butter, 2 heaped tablespoon of flour, a cup of regular powdered sugar, a cup of confectioner’s sugar, 2 pounds of ricotta cheese, 8 large eggs, 1 heaped tablespoon of corn flour, a teaspoon of vanilla essence, and a tablespoon of baking powder. About 20 minutes of preparation time and an hour of cooking time is required to fix this cake.
Once you have all the ingredients ready, start with crushing the cookie crumbs for the crust. Put all the crumbs into a food processor and crush it well. Gradually pour melted butter over the crushed cookie crumbs and mix well until the crumbs start sticking together. Take the mixture of butter and crumbs out of the food processor and flatten it on a 9 inch by 13 inch spring form pan. Put the pan in the refrigerator and let the crust for the cheese cake set. Next whip together a cup of confectioner’s sugar and softened butter in a medium sized mixing bowl. Keep whipping it until it becomes nice and fluffy. Next add half of the ricotta cheese to the mixture and give it a good mix. In a large mixing bowl blend together a cup of powdered sugar, yolks of 8 large eggs and the left over cheese. Add the earlier mixture of sugar, butter and ricotta to this blend and mix well until it becomes really smooth. Next add the remaining ingredients i.e. the flour, the baking powder, the corn flour and the vanilla essence to the mixture and give it a thorough stir till the whole mixture becomes very smooth without any lumps.
Heat your oven to a temperature of 350 degree. Beat the egg white in a separate bowl till it becomes really light and fluffy. Add it to the batter and give it a nice blend. Take the spring form pan out of the refrigerator and set it on a greased baking sheet. Pour the whole batter into the pan and bake it for about an hour. The cake should come out with a pretty golden-brown fluffy exterior and a slightly soft center. Once it cools down, refrigerate it before serving.
