The use of fiber in our diets has been known for decades to be a healthy alternative to the use of fiber-poor, enriched foods that in fact often have little nutritional value other than what has been added during production. Even so-called “whole wheat” bread may in fact be bread that has little fiber and has had less bleaching. Although vitamins and minerals are often added to the bread, making it “enriched,” it is still less healthy than bread made by you in your kitchen using actual whole-grain flour.
