Second to it is the one with a large tanks that is constructed with concrete, steel or fiberglass. They store large amounts of oils and grease because of their large capacity size. This type is mostly used in department stores and restaurants and is commonly referred as gravity interceptor.

The third type is automated which is used to remove fats, oils, and grease from the surfaces using an automated machines. This type will automatically trap the grease and oils from the surfaces once detected. This type will come in different sizes and you must know what size to use in your establishment. The main mechanism for this is that the oils are removed via hydrostatic pressure that is the main component of the automated machine.

This type also contains a small strainer that separates the debris and other food particles. It needs a power source in order to function. This is the more recent invention and is more expensive to buy. Because there are electric wires for these product, care should be taken very well as to avoid accidents and other damages.

The fourth type will make use of a biological process. Biological enzymes are placed to the tanks that could digest the fats and oils. These fats and oils will be converted by the microorganisms into water and gases which are much safer to discharge in the environment particularly in the drainage system. You may use this together with the automated dosing machine and the maintenance would be very minimal. This is one advantage of it.
