Visiting the Sourdough Factory in San Francisco

San Francisco is a busy city and beach scene with lots of things to do. One unique piece of history to visit is the sourdough factory in Fisherman’s Wharf.

Consequently, each bakery’s sourdough has a distinct taste to it. The combination of starter dough, culture, air temperature, humidity and elevation contributes to each batch’s different flavor.

Sourdough starter can be used in two different ways, but typically it is mixed into the bread dough and the bread is kneaded and allowed to rise as normal. The process is similar to an original piece of baker’s yeast.

You should also know that you have to be careful when taking care of the bread so that it stays fresh. You must take care to rinse the sourdough starters which often takes longer than other types of bread.

When you are using a specific starter with a high concentration of lactobacillus or acetic acid bacteria, the large amount of lactic and acetic acids produced needs to be managed with caution.
