The Top Ten Greatest, Yummiest, “This is the Best Thing I’ve Ever Eaten” Recipes in the History of the Universe. (an Understatement) #9

This may only be ninth on the list but it is #1 when it comes to NFL football snack/meal/dude food.

There is nothing wrong with throwing a brick of Velveeta and a jar of salsa in a bowl and microwaving up some queso if you want average. What I mean can be best expressed in the form of a terrible poem…

I can come to grips with a bowl full of chips.
I have gotten a thrill with some brats on the grill.
Sure, burgers are good and I eat more than I should.
But never sell out your guts, for a bowl full of nuts.

There is one recipe that rules them all.

Are you a Packers fan? well… this recipe has cheese.
Are you a Bengals fan? well… this recipe has onions (this will give you something to blame your tears on).
Are you a Bills fan? well… this recipe has beer (your gonna need it).
Are you a Vikings fan? well… there are no cocktail weinies in this recipe but you should still try it (sorry Favre).

I will tell you what, If you are anything like me, your wife will love the fact that you are stuffing your face. Does my wife care that I took out the player from my fantasy line up that just scored his second touchdown? No, she does not care. She listens to me whine about how every other fantasy team has their best week when they play against me. She suffers through my theories that the refs are only calling penalties on my team because of a myriad of poorly thought out conspiratorial reasons.

The truth is she would be much happier if I was stuffing something in my big mouth. This recipe is, in fact, the ultimate cure for the “obnoxious sports guy”.

This recipe stands proudly among the other well known cures and remedies listed here:
Zombies- You have to shoot them in the head.
Tyrannasaurus Rex- Apparently you just have to stand still.
Bears- Play dead.
Bullies- Stand up to them. (this is often a big mistake)
Tornado- Get into the basement.
Flood- Get out of the basement.
“Do these pants make me look fat?”- No.
Obnoxious Sports Guy- Slow Cooker Chicken Taco Soup.

That’s right! Slow Cooker Chicken Taco Soup is our #9 recipe in the…
The Top Ten Greatest, Yummiest, “This is the best thing I’ve ever eaten” Recipes in the History of the Universe. (an understatement)

Slow Cooker Chicken Taco Soup

– 1 onion, chopped
– 1 (16 ounce) can chili beans
– 1 (15 ounce) canned black beans
– 1 (8 ounce) can tomato sauce
– 1 (12 ounce) bottle beer
– 2 (10 ounce) cans diced tomatoes with green chilies, undrained
– 1 1/4 ounces taco seasoning
– 3 whole boneless skinless chicken breasts
– shredded cheddar cheese (optional)
– sour cream (optional)
– crushed tortilla chips (optional)

Directions:
Prep Time: 15 mins
Total Time: 7 1/4 hrs
1. Place the onion, beans, tomato sauce, beer and diced tomatoes in a slow cooker. Add taco seasoning and stir to blend. Lay chicken breast on top of the mixture pressing down slightly until just covereed by the other ingredients. Set slow cooker for low heat cover and cook for 5 hours.
2. Remove chicken breast and allow to cool long enough to be handled. Shred the chicken. Stir shredded chicken back into soup and continue cooking for 2 hours. Serve topped with shredded cheese a dollop of sour cream and crushed tortilla chips, if desired.

Important Note: This recipe appears on a number of different websites like food.com and allrecipes.com but usually includes a 15oz can of corn. We excluded the corn because it is good with corn and perfect without. Perfect, that is, provided these next two suggestions are followed. The “2 -(10 ounce) cans diced tomatoes with green chilies, undrained” should be Ro-Tel brand. Also, this recipe suggests crushed tortilla chips to be put on top but, if you want this to become the perfect sports snack, you will need Tostidos Scoops. Just dip and enjoy.

Additional Note: Every slow cooker is a little different but you can probably trim off some time if you can’t wait 7 hours. My wife and I cook this on high in the slow cooker and it is ready to eat in four hours and just as delicious.
