A Clean Grease Trap Can Keep Your Restaurant in Business
A grease trap is a vital piece of equipment which anyone who has worked in the catering industry will be familiar with. The device works to prevent the huge quantities of grease produced by food service and production outlets from getting into the main sewerage network.
Once there, this waste oil and fat can cause major blockages and back-ups, causing major disruption to the network. Most countries therefore have legal obligations in place for restaurant owners to have fully functioning grease traps in place. They are also usually expected to be ready for frequent inspection by official authorities.
The device works by slowing down the rate at which water can flow down a building\’s drains, allowing the waste oils and fats to congeal. The grease then coagulates, floating to the top, while more solid waste falls into the bottom of the trap. This leaves the rest of the water leaving the building\’s drains to enter the sewerage network.
Broadly speaking, there are four types of device in general use. The first kind are small, point of use devices which are installed in the kitchen of a food outlet. These typically restrict water flow and prevent almost 90 per cent of waste oils and fats from reaching the drains. It is an essential part of every food retail outlet of any kind to have a fully functioning device, both out of hygiene and out of consideration for the wider community.
A second kind of device is more commonly used by larger sized facilities, in places such as larger restaurants or food retail outlets. They are usually made of fibreglass, concrete or steel, and are known as gravity interceptors. Of a much larger size than the variety detailed above, they use a different method to remove some four fifths of all oily and greasy waste from reaching the sewerage network. As their name suggests, they rely on gravity to separate water from greasy waste materials.
A third, more technological kind, are Grease Recovery Devices, also known as Automatic Grease Removal Units. These automated units are a recent innovation, and usually rely on motorized skimmer devices or some form of hydrostatic pressure to keep oily refuse from entering the wider waste network.
A fourth kind relies on biological processes to convert the oily waste it traps into biodegradable substances which can enter the wider water network safely. They utilize micro-organisms to do their work, but there is still scepticism as to their effectiveness, due to the difficulty of maintaining consistent temperatures to keep the micro-organisms stable.
Devices can be cleaned by pumping them out, but it is also often necessary for employees to shovel out the trap by hand in order to keep it clear. Bacteria can also be bought which can be added to the immediate network of the device to help keep it free of congealed waste. This kind of work is often undertaken by specialist contractors rather then the employees of the food outlet itself.
Keeping a grease trap clean and in good working order is an essential part of owning any kind of food retail or service outlet. Ignorance about its importance will be no defence if it breaks and causes a breakdown in the sewerage system.
