Benefits of Grease Trap Cleaning
Grease trap cleaning is a requirement for restaurants and other food service businesses due to the amount of food waste they generate everyday. Grease and food solids in wastewater cause blockage and back-ups in the pipes and drains of a business. Contractors can do the cleaning for a business or if the traps are smaller, they can be cleaned by in-house staff.
A grease trap is a receptacle that prevents used water, fats, oils, and grease (FOG) from entering the municipal sewage system. They can be located either inside the business or outside. Schools and large restaurants usually have their system outside on the grounds or underground. Smaller facilities will have it located inside the building.
They prevent FOG from entering the system by slowing the water that is draining enough to allow the fats time to cool. The fat will coagulate and float to the top. The heavier solids fall to the bottom allowing the water to pass through to the municipal sewer lines.
Businesses dealing with food preparation produce and disposes of meat fats, lard, shortening, butter, margarine, food scraps, cooking oil, sauces, baking goods, and dairy products produce FOG. Unfortunately all of these items are often poured down the drain and cause sewer back-ups. That is why commercial kitchens are required to have a trap in place.
Most state and local agencies also regulate the amount of FOG a business is allowed to produce before having it pumped out or cleaned. Often large restaurants and school cafeterias use an in ground interceptor that normally holds 500 gallons or more. These are usually cleaned by a contractor equipped to deal with the large quantities. Some of the contractors perform the service at a reduced rate and recycle the waste into biodiesel fuel.
One of the ways to reduce the need for frequent cleaning or pump-outs is to direct staff to dispose of solids and oil into the garbage and not into the sink or down a drain. Another method is to use a bacteria additive which biologically breaks down and digests waste and leaves only carbon dioxide and water behind. It is available as a liquid that is poured down the drain or directly into the interceptor and a block which is suspended from a rope and dissolves slowly.
Smaller traps can be cleaned without using a professional. To do so, have several garbage bags lining a can with absorbent filler in the bottom. First, spoon the oil into the bags. Then remove the baffles, clean and thoroughly rinse. Next scrape the bottom and remove all the debris. Clean the bypass vent with a flexible probe. Rinse everything and put it all back together. Dispose of the waste properly by first checking with the local waste management company to find out if it can be dropped off at the dump, if not find a local contractor to pick up.
Grease trap cleaning is important to a business and the community. Having them cleaned properly will prevent sewage back-ups. It also contributes to a properly functioning waste-water treatment facility.
